Sausage and Cranberry Meatballs with Dipping Sauce
Prep Time
1 tablespoon of Olive Oil
1/2 Onion, diced
1 tablespoon of chopped Garlic
1 tablespoon of minced Ginger
1 pound of Farmland® Original Pork Sausage
2 Eggs
1/4 cup of Parmesan
1/2-3/4 cup of Dried Cranberries
Dipping Sauce:
1 tablespoon of Olive Oil
2 teaspoons of Onions
1 teaspoon of Garlic
1 teaspoon of minced Ginger
1/2 cup of Red Wine
1 cup of BBQ Sauce
1 14 oz. can of Cranberry Sauce (jellied)
1. Preheat oven to 350°F. 
2. In pan, sauté onions, garlic, minced jalapeño and ginger in olive oil until onions are soft. Let mixture cool. Once cool add to bowl with uncooked sausage, and mix. 
3. Add eggs, Parmesan and cranberries, and mix. Portion into 2-oz. balls. Place on baking sheet and bake for 30 minutes. 

Dipping Sauce:
1. Sauté onions, garlic and ginger in olive oil until onions are soft. Add red wine; let reduce by 1/2. 
2. Add BBQ sauce and cranberry sauce. Let simmer for 10 minutes. Serve with meatballs.
