Ham and Sweet Potato 'Waffles' with Bacon-Scallion Crema
Prep Time
Sweet Potato Waffles: 
1 tablespoon of coconut oil plus more for greasing waffle iron
2 sweet potatoes, peeled, grated
6  oz. of Farmland┬« Diced Ham
2 eggs, beaten
1 teaspoon of smoked paprika
1 tablespoon of flour
Salt and pepper, to taste
Bacon-Scallion Crema: 
1 cup of sour cream
6 slices of Farmland┬« Thick Cut Bacon, cooked, crumbled
6 scallions, tops removed, sliced thin
Salt and pepper, to taste
Sweet Potato Waffles:
1. Preheat waffle iron and grease very liberally with coconut oil.
2. Dry sweet potatoes to remove excess moisture.
3. In medium bowl, combine sweet potatoes, ham, eggs and paprika. Mix well to combine.
4. Add in flour, salt and pepper, and mix gently. (Add more flour if mixture appears to be too wet.)
5. Spread sweet potato mixture on greased waffle iron and cook for approximately 5 minutes.
6. Continue to cook waffles, making sure to re-grease between batches.

Bacon-Scallion Crema:
1. In small bowl, combine first three ingredients, mix to combine, and season with salt and pepper.
