Zucchini-Bacon Crisps

Ingredients

  • 1 (1-lb.) pkg. Farmland® Hickory Smoked Bacon
  • 1  zucchini squash, shredded (about 2 cups)
  • 2/3 cup light or regular sour cream
  • 1/2 cup chopped red onion
  • 2 teaspoons hot pepper sauce
  • 18 slices French bread
  • 4 oz. Swiss cheese, thinly sliced

Preparation

  1. Heat oven to 350°F. Cook bacon until browned and crisp. Drain, cool and crumble. Combine bacon, zucchini, sour cream, onion and hot sauce.
  2. Lightly toast French bread slices on each side. Divide zucchini-bacon mixture onto bread slices. Top with Swiss cheese slices. Bake at 350°F. for 10 minutes.

Notes

  1. MICROWAVE: Prepare recipe as instructed above. Place 4 zucchini-bacon crisps on a microwave-safe plate. Microwave on HIGH (100% power) for 45 to 60 seconds or until cheese is melted and crisps are heated through. Repeat with remaining crisps.
