2 cups chopped fresh broccoli
1 cup sliced fresh mushrooms
1/2 cup chopped onion
1 tablespoon olive oil
4 fully cooked sausage links , thinly sliced
1/2 teaspoon minced garlic
1/2 teaspoon dried thyme
1/4 teaspoon dried basil
1/2 cup shredded Parmesan cheese
1 1/2 cups refrigerated liquid egg whites
- Heat oven to 350°F. Spray 9-inch pie plate with nonstick cooking spray. Sauté vegetables in olive oil over medium-high heat until crisp-tender; stir in sausage, garlic, thyme and basil. Pour into prepared pie plate.
- Sprinkle cheese over sausage mixture. Pour egg whites into pan; pressing down vegetables and sausage so they are under eggs.
- Bake at 350°F. for 35 to 40 minutes until browned and knife inserted in center comes out clean. Let stand 10 minutes before slicing to serve.
