Make Ahead Ham 'N Egg Wraps
A savory breakfast meal you can make ahead, then simply thaw and reheat in the morning.
Prep Time: 15 mins.
3/4 cup of Buttermilk Baking Mix
1/4 cup of Milk
1 (1-lb.) package of Cubed Ham, drained
2 cups (8 oz.) of shredded Cheddar Cheese
2 cups (8 oz.) of shredded Monterey Jack Cheese
2 (4-oz.) cans of chopped Green Chiles
1/2 cup of chopped Red Bell Pepper(s)
12 (10-inch) Flour Tortillas
1. Heat oven to 350°F. Beat together eggs, biscuit mix and milk.
2. Stir in remaining ingredients except tortillas. Pour into greased 13x9x2-inch baking dish. Bake at 350°F for 40 to 50 minutes until knife inserted near center comes out clean. Let cool.
3. Cut eggs into 12 servings. Place 1 serving in center of each tortilla; fold to enclose eggs. Wrap each serving tightly in plastic wrap, then place in freezer food storage container and freeze.
4. To serve, thaw an individual serving in refrigerator overnight, then microwave for approximately 2 minutes on highuntil heated through.
