Green Beans 'N Corn With Bacon

Ingredients

  • 6 slices Farmland® Thick Sliced Bacon
  • 1/2 cup chopped onion
  • 1 garlic clove(s), minced
  • 1 (16-oz.) pkg. frozen green beans, thawed
  • 1 cup frozen whole kernel sweet canned corn, thawed
  • 1/3 cup chopped red bell pepper
  • 3 tablespoons butter, or margarine
  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground cayenne pepper

Preparation

  1. Cut bacon into 1/2-inch pieces. Cook in large skillet over medium-high heat until crisp; drain.
  2. Carefully pour all but 1 tablespoon grease from pan. Add onions; cook 2 to 3 minutes or until tender. Stir in garlic. Add green beans, corn, bell pepper and butter. Cover; cook 4 to 5 minutes until thoroughly heated.
  3. Stir in bacon, lemon zest and cayenne pepper. Serve immediately

Serves Makes 5 cups
