German Potato Salad with Chopped Ham
A flavorful twist to a German classic, our ham gives this potato salad a boost of flavor.

3 pounds of Yukon Gold Potatoes, peeled and cubed
1 tablespoon of Neutral Cooking Oil
1 package of Farmland® Sliced Ham, cut into strips about 1/2-in. wide
1 cup of diced White Onion
1/2 cup of White Vinegar
1/4 cup of White Sugar
1/2 cup of Dijon Mustard
1/4 cup of minced Chives
Salt and Pepper, to taste
1. In boiling salted water, cook potatoes until just tender.
2. While potatoes are cooking, heat pan over medium heat and add oil. When oil is hot, add sliced ham and cook until lightly browned with crispy, golden edges.
3. When potatoes are done cooking, allow to cool slightly. While still warm, gently mix potatoes in large bowl with all other ingredients. Taste for seasoning.
