Crispy Brussels Sprouts with Smoked Sausage

Ingredients
1 tablespoon of Vegetable Oil
1 6-oz. Farmland® Smoked Sausage
3 cups of Brussels Sprouts, halved
1 large Shallot, whole roasted until soft
Salt and Pepper, to taste
1/4 cup of Spicy Pickled Peppers
4 Basil Leaves, torn
For Vinaigrette:
1/4 cup of Apple Cider Vinegar
1 tablespoon of Dijon Mustard
1 teaspoon of Maple Syrup
1 teaspoon of minced Shallot
1/2 cup of Olive Oil
Salt and Pepper, to taste
Directions
1. In large sautĂ© pan, heat oil over medium-high heat. Add sausage and cook until well browned. Remove and reserve. 
2. Add brussels sprouts to pan and cook until caramelized, not mushy. Add sausage back to pan to warm through along with roasted shallot. 

For Vinaigrette:
1. In medium bowl, combine all ingredients except oil and seasonings. 
2. Slowly whisk in olive oil until emulsified. Season with salt and pepper. 
3. Add 1/2 cup apple cider vinaigrette to sausage and sprouts and season.
Serve: Top with pickled peppers and torn basil.
