Breakfast Chilaquiles
We took a traditional Mexican dish and added eggs and Farmland bacon to make it the perfect morning meal.

4 cups of Vegetable Oil
10 Corn Tortillas, cut into 1-inch strips and halved
3/4 cup of chopped Onion
1 19-oz can of Red or Green Enchilada Sauce
1 package of Hickory Smoked Bacon cut into 1-inch pieces
6 Eggs
1. Heat oil in large skillet to 400°F. Add one-half of the tortillas and fry, stirring until golden and crisp, about 2 minutes. Drain on paper towels. Repeat with remaining tortillas.
2. Heat 1 tablespoon oil in 11-inch skillet; add onion and stir-fry over medium-high heat until tender-crisp. Stir in enchilada sauce; bring to a boil. Stir in fried tortilla strips and bacon; bring to a boil, stirring occasionally.
3. Carefully break each egg on top of hot tortilla mixture. Reduce heat to medium-low. Cover and cook until eggs are done, about 10 minutes. Sprinkle top with shredded cheese. Serve topped with a dollop of sour cream.
