Breakfast Bacon Corn Muffins

Ingredients

  • 1 (6 1/2- to 8 1/2-oz.) pkg. corn muffin mix
  • 1 cup (4 ounces) shredded Cheddar cheese
  • 1 egg(s)
  • 1/2 cup milk
  • 6 slices Farmland® Fully-Cooked Bacon - Hickory, cut in half

Preparation

  1. Heat oven to 400°F. Lightly grease muffin pan.
  2. Combine muffin mix, cheese, egg and milk; mix with fork until just combined.
  3. Spoon muffin mix into 6 greased muffin cups. Form an "X" over the top of each muffin with 2 halves of bacon strip, tucking ends into batter.
  4. Bake at 400°F. for 15 to 20 minutes until golden brown.

Serves 6 muffins
