Bacon Tortilla Roll-Ups

Ingredients

  • 1 (16-oz.) pkg. Farmland® Hickory Smoked Bacon
  • 1 (3-oz.) pkg. cream cheese, softened
  • 3/4 cup light sour cream
  • 5 (9-inch) flour tortillas
  • 1 cup fresh leaf spinach, finely chopped
  • 4  green onion(s), sliced
  • 1 cup (4 oz.) shredded Monterey Jack cheese
  • 1 cup salsa

Preparation

  1. Cook bacon until crisp. Drain, crumble and set aside.
  2. Combine cream cheese and sour cream; spread 1/5 of the mixture on each flour tortilla. Sprinkle 1/5 of the bacon, spinach, onions and cheese on each tortilla.
  3. Roll up tortillas. Wrap individually in plastic wrap. Refrigerate for at least 1 hour. Cut into 1-inch slices. Serve with salsa for dipping.
