Bacon Asparagus Wraps
12 Medium to Large Fresh Asparagus Spears
10 slices of Hickory Smoked Bacon - Center Cut
Fresh Ground Black Pepper
1. Bring water to a boil in large enough pan to submerge asparagus. Cut 1 1/2 inches off bottom of asparagus spears. Place asparagus in boiling water for 1 minute. Place in ice water to stop cooking.
2. Lay 5 bacon slices on cutting board, overlapping each slice about 1/4-inch to form a mat. Season with fresh ground pepper. Repeat with remaining bacon to form a second mat.
3. Heat large skillet to medium. Center 6 asparagus spears at one end of each bacon mat. Line up the spear tops and cut bottoms so all pieces are the same length. Roll bacon tightly around asparagus to form a sushi-style roll.
4. Place in heated skillet. Cook and roll bundles until bacon is crispy. Remove from skillet; cut bundles into 1 1/2-inch slices for serving.
